Also called Chinese Cabbage or Pak Choi, Bok Choy is a leafy green with a white stem. The Baby Bok Choy is usually all green, as it has not yet matured. These leaves are smaller and more tender. Bok Choy is great in stir-fries and should always be cooked or steamed prior to consumption.

It is very low in calories but rich source of vitamin-C, vitamin-A, and phytonutrients such as thiocyanates, indole-3-carbinol.
