The yolk from the local egg is considerably thicker and richer than that of the conventional supermarket egg. Biting into it reveals a membrane surrounding the yolk which is more prominent than on the supermarket egg. This yolk has more resilience and viscosity, and has a more buttery, rich flavor and the mouth-feel of store bought mayonnaise. There are more grass and earth notes in this egg yolk, and its aftertaste is heady and good.
